Over the years I have mixed and matched different chili recipes to create this one & now it's a family favorite!
We like it kinda spicy in this house, so if you're not a fan of the spice - skip the cayenne pepper & go with 2 tbsp of chili powder instead of 3!!
1 lb ground beef
1 white onion
1 tbsp butter
2 tbsp minced garlic
salt & pepper to taste
3 tbsp chili powder
1 tbsp cumin
1/2 tsp cayenne pepper
1 can red kidney beans (drained)
1 can medium spice chili beans
2 cans Rotel
2 cans tomato sauce (8 oz)
1/2 cup of water
Fixin' topping ideas:
Shredded cheddar cheese bacon bits sliced jalapeño chilis
Saltine crackers sour cream red or green onions
Add 1 tbsp butter and chopped onion in large pot, cook 5 minutes on medium heat. Add ground beef and minced garlic, cook until brown. Drain grease from pot. Add the tomato sauce, all seasonings & water. Mix to combine. Add beans, mix and bring to a simmer. Cover and cook for 1-2 hours. Serve with your desired toppings, enjoy!
+ If you're looking for a substitute for the ground beef, I suggest ground turkey!
+ Sometimes, I double this recipe and make Baked Chili Dogs later in the week with the leftovers!
+We like to eat our chili with a slice or two of cornbread.
